Topinambour, also called Jerusalem artichoke is a vegetable is a species of sunflower whose tubers are used in cooking.
Little used in Europe, it was consumed in large quantities during the Second World War.
Jerusalem artichoke contains many valuable substances such as vitamins (particularly vitamins A, B3 and vitamin C) and minerals (especially potassium). It also contains inulin which helps to fight against constipation, helps regulate the intestinal flora and may prevent colon and breast cancers.
