Gluten - Definition


Gluten is a substance mainly found in cereals. With starch, it is a large part of the energy reserves of the grain. Gluten is composed of protein, fatty acids, and sugar. It represents the majority of wheat protein and is contained in barley and rye. Some people have a gluten intolerance, also called celiac disease, others are allergic to gluten, their symptoms may be abdominal pain, vomiting, weight loss, and diarrhea. After tests confirming this intolerance, gluten-containing foods should be eliminated from the diet of the patient, and the shortages compensated.
